Contrairement à ce que l’on pourrait penser, le nom de ce café ne vient pas d’une région mais d’un peuple : les Mandailing de l’ile de Sumatra en Indonésie où les caféiers ont poussé.
Comme ma plupart de nos cafés, il est cultivé de façon traditionnelle sans pesticides et récolté principalement à la main. Vous pourrez donc y trouver des notes de chocolat et de bois qui proviennent de la terre volcanique sur lequel il a poussé.
